Alexy Katco, member of our Eco Satellite Club, shared his love and knowledge of chocolate for 22 guests at the Short N Sweet Bakery in Hilo.  He brought several varieties for us to try and they were all lovely.  Alexy discussed the process he has developed for using all contents of the cacao pod rather than just the chocolate nibs. This results in a 20% increase in yield.
 
Alexy also brought samples of his processed purple sweet potatoes.  Everyone was given a packet of frozen sweet potatoes to take home. This writer has his with salmon and it was a perfect accompaniment .
